It’s Salsa Time!

From the garden to the table, homemade salsa doesn’t get any fresher than this!

I would give you Anthony’s salsa recipe if I could, but I can’t. It’s not that it’s a big family secret, it’s that he really doesn’t have one. But, I will tell you what I know. I know that it consists of tomatoes, bell peppers, onions, juice from a lime, garlic, salt, cilantro, and hot peppers (i.e. Jalepenos) to taste. He cuts the vegetables, puts them in our food processor and starts playing with it till he gets the flavor he’s looking for–he does have a certain order that he adds them to the food processor, but that gets beyond my range of expertise.

Coconut Milk

I’ve always loved coconut.  My husband, not so much.  A few years ago, I decided to see what would happen if I used coconut milk in Blueberry muffins instead of milk and let me tell you, yumminess happened.  My husband even agreed.  From that point on, if a recipe called for milk and I wanted to make it extra special, I used coconut milk.  Go ahead, try it. Summertime Dinners

When we were in Germany, some of our American friends would grill weekly or biweekly.  We found out later that it’s actually illegal to grill more than once a month (actually, this law is hard to nail down and no one is really sure of how often is too much, but once a month seemed to be the thing most people said).  I guess the reasoning behind not grilling too much is the smoke travels up to the windows of your neighbors and since there is no AC in Germany, most people have their windows open in Summer.  We combated this by simply asking our neighbor if he minded if we grilled once a week and we were all set to go.

Clever Ways to Use a Knitting Counter

The gym I go to has small track.  16 laps = 1 mile.  I don’t know about you, but I lose track after lap 2 and about lap 4, I think, I’ve definitely run a mile by now.  So I decided to use my knitting counter to help me keep track of my laps.  And you know what?  A mile is a lot longer than I thought 🙂 (more…)
